Add rolled oats to a blender and blend until you have oat flour. Set aside. In a blender add the banana + eggs and blend until combined. Add the oat flour back in along with the protein powder, cinnamon, and vanilla. Blend until a batter consistency. Heat coconut oil in a pan over medium heat. Pour in batter and cook about 1-2 minutes each side.
Serve with melted berries, syrup, or whipped cream.
