Banana Oat Protein Pancakes

I like to make a few batches of these on the weekend and then store them in the fridge for easy grab snacking during the week.
Course Breakfast


  • 1 medium ripe banana
  • 2 large eggs
  • 1/3 cup rolled oats
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla
  • 1 scoop vanilla protein powder


  • Add rolled oats to a blender and blend until you have oat flour. Set aside. 
    In a blender add the banana + eggs and blend until combined. Add the oat flour back in along with the protein powder, cinnamon, and vanilla. Blend until a batter consistency. 
    Heat coconut oil in a pan over medium heat. Pour in batter and cook about 1-2 minutes each side.


Serve with melted berries, syrup, or whipped cream.
